Alfa's pizza ovens all feature their trademarked Heat Genius technology, to ensure consistently perfect pizza. This is comprised of 3 key features. The pizza ovens feature a 'HeatKeeper' firebrick - made in Rome, which stores head better than lava stone or ceramic, helping to deliver a moist yet cripsy crust. Their DubleDown Ceramix Superwool Insulation offers incredible heat resistance to maintain oven heat. Finally, a patented Full Effect Full Circulation Flue System, delivers optimal air circulation to ensure that both the crust & toppings are cooked consistently to the proper temperature.
